Korean Ground Beef Bowl

Ingredients
  

1 lb ground beef (preferably lean)

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp gochujang (Korean red chili paste)

2 green onions, chopped (with greens separated)

1/4 cup shredded carrots

1 cup cooked jasmine rice

Sesame seeds for garnish

Steamed broccoli or bok choy (optional for serving)

Instructions
 

In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

    Increase the heat to high and add the ground beef. Cook until browned, breaking apart with a spatula, around 5-7 minutes.

      In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, and gochujang until well combined. Pour this sauce over the browned beef in the skillet.

        Stir in the shredded carrots and the white parts of the green onions. Cook for an additional 2-3 minutes until the sauce thickens slightly and vegetables are tender.

          Serve the beef over a bed of jasmine rice. Top with green onion greens, sesame seeds, and optional steamed broccoli or bok choy for added greens.
