1 lb corned beef, chopped

4 cups beef broth

1 cup heavy cream

1 cup riced cauliflower

1 cup sauerkraut, drained and rinsed

1 cup shredded Swiss cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large pot over medium heat, add a splash of oil and sauté the diced onion until translucent, about 3-4 minutes.

    Add the minced garlic and cook for an additional 1 minute, until fragrant.

      Stir in the chopped corned beef and cook for 2-3 minutes to heat it through and allow it to absorb the flavors.

        Pour in the beef broth and bring the mixture to a simmer.

          Add the riced cauliflower, sauerkraut, Dijon mustard, Worcestershire sauce, and dried thyme. Stir well and let it simmer for about 10 minutes.

            Reduce the heat to low and gently stir in the heavy cream and shredded Swiss cheese. Continue stirring until the cheese is melted and fully incorporated into the soup.

              Season the soup with salt and pepper to taste.

                Ladle the soup into bowls and garnish with fresh parsley.
