Ingredients
  

2 cups long-grain parboiled rice

1/4 cup vegetable oil

1 large onion, chopped

1 bell pepper (red or yellow), diced

2 cups tomato puree

1/2 cup tomato paste

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 teaspoons thyme (dried)

1 teaspoon curry powder

1 teaspoon paprika

2-3 cups chicken or vegetable broth

1-2 bay leaves

Salt and pepper to taste

1 cup mixed vegetables (carrots, peas, corn)

Fresh parsley or cilantro, for garnish

Instructions
 

Rinse the rice in cold water until the water runs clear. Drain and set aside.

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

      Stir in the diced bell pepper, minced garlic, and grated ginger. Cook for another 2-3 minutes until fragrant.

        Add the tomato puree and tomato paste to the pot, stirring well to combine. Cook for 10-15 minutes, allowing the mixture to thicken and the flavors to meld.

          Season the sauce with thyme, curry powder, paprika, salt, and pepper. Mix well.

            Pour in the rinsed rice, stirring to coat the grains in the sauce.

              Add the chicken or vegetable broth, ensuring the rice is submerged. Toss in the bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid has evaporated.

                In the last 5 minutes of cooking, add the mixed vegetables to the rice and stir gently.

                  Once cooked, remove from heat and let the rice sit covered for another 5 minutes to steam. Fluff with a fork before serving.
