4 boneless, skinless chicken breasts

1 cup fresh raspberries

2 jalapeños, finely chopped (deseeded for less heat)

3 tablespoons honey

2 tablespoons balsamic vinegar

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a blender or food processor, combine the fresh raspberries, chopped jalapeños, honey, balsamic vinegar, minced garlic, olive oil, salt, and pepper. Blend until you achieve a smooth sauce.

      In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Season both sides of the chicken breasts with salt and pepper.

        Sear the chicken breasts in the skillet for about 4-5 minutes on each side, or until they are golden brown (they will not be fully cooked).

          Pour the raspberry-jalapeño sauce over the seared chicken, ensuring each piece is well coated.

            Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Once cooked, remove the skillet from the oven and let the chicken rest for about 5 minutes.
