1 cup corn kernels (fresh or frozen)

1 jalapeño pepper, finely diced (seeds removed for less heat)

1 cup cornmeal

½ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or regular milk)

1 large egg

Vegetable oil for frying

In a large mixing bowl, combine the corn kernels and diced jalapeño.

    In another bowl, mix the cornmeal, flour, baking powder, garlic powder, onion powder, salt, and black pepper until well combined.

      In a separate bowl, whisk together the buttermilk and egg until smooth.

        Pour the buttermilk mixture into the dry ingredients and stir until just combined.

          Gently fold in the corn and jalapeño mixture until evenly distributed, being careful not to overmix.

            Heat about 2 inches of vegetable oil in a deep skillet over medium heat until hot (approximately 350°F or 175°C).

              Using a tablespoon, carefully drop spoonfuls of the corn mixture into the hot oil. Fry in batches to avoid overcrowding.

                Cook for about 2-3 minutes or until the nuggets are golden brown on all sides. Flip them halfway through cooking for even browning.

                  Once cooked, use a slotted spoon to remove the nuggets and drain them on a paper towel-lined plate.

                    Repeat the process until all the batter is fried.
