8 slices of thick-cut bacon, chopped

1 large onion, finely chopped

3-4 fresh jalapeños, seeded and minced

3 cloves garlic, minced

1/2 cup brown sugar

1/4 cup apple cider vinegar

1/2 teaspoon smoked paprika

In a large skillet over medium heat, cook the chopped bacon until it becomes crispy. This will take about 8-10 minutes. Stir occasionally to ensure even cooking.

    Using a slotted spoon, transfer the cooked bacon onto a paper towel-lined plate, leaving the excess bacon fat in the skillet.

      In the same skillet, add the finely chopped onion and cook for about 5-6 minutes until softened and slightly caramelized.

        Add the minced jalapeños and garlic to the skillet, stirring well, and cook for another 2-3 minutes until fragrant.

          Stir in the brown sugar, apple cider vinegar, smoked paprika, and cooked bacon. Mix everything thoroughly to combine.

            Reduce the heat to low and simmer the mixture for about 20-25 minutes, stirring occasionally until the mixture thickens and reaches a jam-like consistency.
