1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 cup milk

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

1 cup mixed dried fruit (raisins, cranberries, apricots)

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Zest of 1 lemon

1/4 cup confectioners' sugar (for dusting)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a loaf pan.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until well combined.

      Cream Butter and Sugar: In another mixing bowl, cream the softened butter and granulated sugar together with an electric mixer until light and fluffy (about 3-5 minutes).

        Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring that each is fully incorporated. Add the vanilla extract and lemon zest, mixing well.

          Combine Mixtures: Gradually add the dry flour mixture to the butter mixture alternately with the milk, starting and finishing with the flour mixture. Mix until just combined; do not overmix.

            Fold in Fruit: Gently fold in the mixed dried fruits, ensuring they are evenly distributed throughout the batter.

              Pour Batter into Pan: Pour the batter into the prepared cake pan, spreading it evenly with a spatula.

                Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

                  Cool and Dust: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, dust the top with confectioners' sugar.
