½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract

1 teaspoon baking powder

1 cup ground walnuts (or mixed nuts)

2 teaspoons milk (as needed for dough)

Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

    Add Wet Ingredients: Beat in the egg, vanilla extract, and almond extract until well combined.

      Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and a pinch of salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. If the dough is too crumbly, add milk one teaspoon at a time until it holds together.

        Incorporate Nuts: Gently fold in the ground walnuts until evenly distributed throughout the dough.

          Chill the Dough: Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes or until firm.

            Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

              Roll and Cut: On a lightly floured surface, roll out the chilled dough into a ¼-inch thick rectangle. Using a sharp knife or a pizza cutter, cut the dough into 2-inch squares.

                Form Cookies: Place a small amount of chopped nuts or your favorite jam in the center of each square. Fold the corners over the filling to create a pocket and press gently to seal.
