Ingredients
  

4 slices of sourdough bread

1 cup mozzarella cheese, shredded

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup black olives, sliced

1/4 cup pesto sauce

1/4 tsp garlic powder

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

2 tbsp olive oil or butter for toasting

Instructions
 

Prepare the Filling: In a medium bowl, combine the mozzarella cheese, sun-dried tomatoes, basil leaves, black olives, garlic powder, red pepper flakes, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Assemble the Sandwich: Take two slices of sourdough bread and spread a generous amount of pesto sauce on one side of each slice. On the non-pesto side, layer half of the filling mixture evenly. Place the other two slices on top, pesto side down.

      Toast the Sandwich: In a large skillet over medium heat, add the olive oil or butter. Once hot, carefully place the sandwiches in the skillet. Grill for about 3-4 minutes, or until the bottom is golden brown and the cheese starts to melt.

        Flip and Continue Cooking: Using a spatula, gently flip the sandwiches over and press down slightly. Grill for another 3-4 minutes or until the second side is golden brown and the cheese is fully melted.

          Serve: Remove the sandwiches from the skillet and let them cool for a minute. Cut them in half diagonally and serve hot with extra pesto on the side for dipping if desired.
