Ingredients

1/4 cup olive oil

3 tablespoons red wine vinegar

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon dried basil

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1 teaspoon honey (optional for sweetness)

1 pound chicken breasts (boneless, skinless)

Instructions

In a medium bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, basil, rosemary, salt, black pepper, and red pepper flakes (if using). If you like a hint of sweetness, stir in the honey.

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.

Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 30 minutes to 2 hours for optimal flavor—overnight is ideal if time allows.

Preheat your grill or oven to medium-high heat. If grilling, lightly oil the grates.

Remove the chicken from the marinade, letting excess marinade drip off. Discard the remaining marinade.

Grill the chicken for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a parchment-lined baking sheet and bake for 25-30 minutes, or until cooked through.

Let the chicken rest for a few minutes before slicing or serving. Garnish with fresh herbs or lemon slices if desired.
