Ingredients

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/3 cup granulated sugar

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/2 cup fresh strawberries, pureed

1/2 cup white chocolate chips

Fresh strawberry slices (for garnish)

Pinch of salt

Instructions

Prepare the Crust: In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined. Press this mixture firmly into the bottom of mini muffin tins or silicone molds. Bake at 350°F (175°C) for 5-7 minutes until lightly golden. Remove and let cool.

Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract and a pinch of salt, and mix until well incorporated.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gradually fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Add Strawberry Flavor: Gently fold in the pureed strawberries. This will give the cheesecake filling a delightful pink hue and fresh flavor.

Assemble the Bites: Spoon the cheesecake mixture over the cooled crust, filling each mold until full. Smooth the tops with a spatula.

Chill: Cover the muffin tin and refrigerate for at least 4 hours, or until set.

Prepare the Topping: Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth. Let it cool slightly before drizzling over the chilled cheesecake bites.

Serve: Once the cheesecake bites are set, gently pop them out of the muffin tins. Drizzle with melted white chocolate, and top each bite with a fresh strawberry slice for an elegant finish.
