1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/3 cup granulated sugar

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/2 cup fresh strawberries, pureed

1/2 cup white chocolate chips

Prepare the Crust: In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined. Press this mixture firmly into the bottom of mini muffin tins or silicone molds. Bake at 350°F (175°C) for 5-7 minutes until lightly golden. Remove and let cool.

    Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract and a pinch of salt, and mix until well incorporated.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gradually fold the whipped cream into the cream cheese mixture until smooth and fluffy.
