1 lb ground sausage (spicy or mild, your choice)

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup original Bisquick mix (or any baking mix)

1 can (10 oz) Rotel diced tomatoes and green chilies, drained

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cayenne pepper (optional, for extra heat)

1/4 tsp black pepper

1/2 tsp salt

Fresh parsley or chives, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Mix the Ingredients: In a large mixing bowl, combine the softened cream cheese and ground sausage. Use your hands or a spatula to blend them until smooth.

      Add the Dry Ingredients: Add the shredded cheddar cheese, Bisquick mix, drained Rotel, garlic powder, onion powder, cayenne pepper, black pepper, and salt to the cream cheese-sausage mixture. Mix until thoroughly combined. The mixture should be slightly sticky but hold together well.

        Shape the Balls: Using your hands, scoop about 1 tablespoon of the mixture and roll it into a ball. Place each ball onto the prepared baking sheet, spacing them about 2 inches apart. You should get approximately 24-30 sausage balls.

          Bake: Bake in the preheated oven for about 20-25 minutes, or until the sausage balls are golden brown and cooked through.
