For the Banana Cake:

2 cups ripe bananas, mashed (about 4 medium bananas)

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup buttermilk

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the Banana Pudding:

2 cups milk

1/2 cup granulated sugar

1/3 cup cornstarch

1/4 teaspoon salt

4 egg yolks, beaten

1 teaspoon vanilla extract

1/2 cup sliced bananas

For Assembly:

1 package (8 oz) vanilla wafers

Whipped cream, for topping

Additional banana slices, for garnish

Instructions
 

Prepare the Banana Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.

        - In another bowl, combine the mashed bananas, flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, alternating with the buttermilk, starting and ending with the flour mixture.

          - Divide the batter equally between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

            - Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

              Make the Cheesecake Layer:

                - In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. Add the vanilla extract and mix until combined.

                  - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Set aside.

                    Prepare the Banana Pudding:

                      - In a saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat. Cook until the mixture starts to thicken and bubble, about 5-7 minutes.

                        - Once thick, slowly temper the beaten egg yolks with a little of the hot mixture, then whisk the egg yolk mixture back into the saucepan. Continue to cook for 2 more minutes, stirring constantly.

                          - Remove from heat and stir in the vanilla extract and sliced bananas. Let the pudding cool for about 30 minutes.

                            Assemble the Cake:

                              - Place one banana cake layer on a serving plate. Spread half of the cheesecake mixture on top, followed by half of the banana pudding. Add a layer of vanilla wafers.

                                - Place the second banana cake layer on top and repeat with the remaining cheesecake mixture, banana pudding, and vanilla wafers.

                                  - Top the cake with whipped cream and garnish with banana slices and additional vanilla wafers if desired.

                                    Chill and Serve:
