Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

4 cloves garlic, minced

1 medium zucchini, diced

1 large red bell pepper, diced

1 can (14 oz) diced tomatoes, with juice

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Grated Parmesan cheese for serving (optional)

Fresh basil for garnish (optional)

Instructions
 

Sauté the Sausage: Set the Instant Pot to the sauté function and add olive oil. Once hot, add the Italian sausage and cook until browned, breaking it up with a spoon. This should take about 5 minutes.

    Add Aromatics: Stir in the diced onion and minced garlic, allowing to sauté until the onion is translucent (about 3-4 minutes).

      Incorporate Veggies: Add the diced zucchini and red bell pepper to the pot, mixing well to combine. Cook for another 2-3 minutes.

        Add Tomatoes and Broth: Pour in the diced tomatoes (with juices) and the broth. Stir in the Italian seasoning and red pepper flakes (if using).

          Pressure Cook: Secure the lid on the Instant Pot, ensuring the valve is set to sealing. Set to manual high pressure for 10 minutes.

            Release Pressure: Once cooking is complete, perform a quick release of the pressure. Carefully open the lid once all steam has escaped.

              Stir in Cream and Spinach: Stir in the heavy cream and chopped spinach, letting it wilt into the hot soup. Allow it to simmer on the sauté function for another 3-5 minutes to warm through. Adjust the seasoning with salt and pepper as needed.

                Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil if desired.
