8 oz. fettuccine pasta

1 lb. thinly sliced sirloin steak

1 tablespoon olive oil

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

1 cup sliced mushrooms

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded provolone cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Start by boiling a large pot of salted water. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Cook the Steak: In a large skillet over medium-high heat, add olive oil. Once hot, add the thinly sliced sirloin steak, seasoning with salt and pepper. Cook the steak for about 3-4 minutes until browned and just cooked through. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes until they’re softened and starting to caramelize. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Create the Sauce: Lower the heat to medium and pour in the heavy cream, stirring to combine. Allow the cream to warm up for a minute before adding the provolone and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
