1 lb (450g) large shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

1 medium onion, finely chopped

2 cloves garlic, minced

1-inch piece ginger, grated

2 tomatoes, chopped

1-2 green chilies, slit lengthwise (adjust based on spice preference)

2 tbsp vegetable oil

1 tsp mustard seeds

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp coriander powder

1 tsp garam masala

Salt, to taste

Fresh cilantro, chopped (for garnish)

1 tbsp lemon juice

Cooked basmati rice or naan (for serving)

Instructions
 

Prepare the Spice Base: In a large skillet or a pot, heat vegetable oil over medium heat. Add mustard seeds and let them crackle. Follow with cumin seeds.

    Sauté Aromatics: Add the chopped onion and sauté until golden brown. Stir in ginger and garlic, sautéing for an additional minute until fragrant.

      Cook the Tomatoes: Add chopped tomatoes and green chilies to the pan. Cook until the tomatoes are soft and mushy.

        Add Spices: Sprinkle in turmeric, coriander, and salt. Mix well and cook for a couple of minutes, allowing the spices to bloom.

          Incorporate Coconut Milk: Pour in the coconut milk, stirring to combine with the spice mixture. Bring to a gentle simmer.

            Add Shrimp: Once the coconut milk is warmed, add the shrimp, cooking for about 5-7 minutes or until they turn pink and opaque. Stir occasionally to ensure they cook evenly.

              Finalize the Curry: Stir in garam masala and lemon juice. Adjust seasoning with salt as needed. Let it simmer for another 2 minutes to meld flavors.

                Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot over steaming basmati rice or with naan.
