500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt, to taste

For the Butter Sauce:

3 tablespoons unsalted butter

1 tablespoon oil (preferably vegetable)

1 large onion, finely chopped

4 cloves garlic, minced

1 inch ginger, grated

2 green chilies, slit (optional for heat)

1 can (400g) crushed tomatoes

1 tablespoon sugar (to balance acidity)

1 cup heavy cream

1 teaspoon garam masala (for final seasoning)

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces, yogurt, lemon juice, garam masala, cumin, coriander, turmeric, red chili powder, and salt. Mix well to coat the chicken. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavors.

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Add a little oil to the skillet or grill pan. Cook the marinated chicken pieces for about 5-7 minutes on each side or until they are cooked through and have a nice char. Remove and set aside.

      Prepare the Butter Sauce: In a large pan, heat the butter and oil over medium heat. Add the chopped onions and sauté until they are soft and golden brown, about 5-8 minutes. Stir in the minced garlic, grated ginger, and green chilies. Cook for another 1-2 minutes until fragrant.

        Add the Tomatoes: Pour in the crushed tomatoes and stir in the sugar. Cook this mixture for 8-10 minutes, allowing it to simmer until the tomatoes break down and the sauce thickens.

          Combine Chicken and Cream: Reduce the heat to low, add the grilled chicken pieces to the sauce, and pour in the heavy cream. Stir everything well to combine. Let it simmer for an additional 5 minutes for the flavors to meld together.

            Finishing Touches: Stir in the garam masala, taste, and adjust salt or spice level if necessary. Remove from heat and garnish with fresh cilantro.
