Ingredients
  

2 cups Arborio rice

4 cups chicken or vegetable broth

1 small onion, finely chopped

2 cloves garlic, minced

1 cup grated Parmesan cheese

1 cup mozzarella cheese, diced into small cubes

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs (preferably Panko for extra crunch)

Vegetable oil for frying

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Rice: In a large saucepan, bring the chicken or vegetable broth to a simmer. Add the Arborio rice, chopped onion, and minced garlic. Stir and cook over low heat for about 18-20 minutes until the rice is tender and creamy. Allow it to cool slightly.

    Combine Ingredients: In a large bowl, mix the cooked rice with grated Parmesan cheese, dried Italian herbs, salt, and pepper. Once slightly cooled, you can also fold in the diced mozzarella cheese.

      Form the Balls: With your hands, take a handful of the rice mixture and shape it into a ball, about the size of a golf ball. Make a small indentation in the middle and place a small cube of mozzarella cheese inside. Seal the rice around the cheese and roll it into a smooth ball. Repeat until all rice is used.

        Prepare for Frying: Set up a breading station with three shallow bowls: one with flour, one with the beaten eggs, and one with breadcrumbs. Roll each rice ball first in flour, then dip into the egg, and finally coat with breadcrumbs.

          Fry the Arancini: In a large deep pan or pot, heat vegetable oil over medium heat. Once hot, carefully add a few rice balls at a time, frying until they are golden brown and crispy, about 4-5 minutes per batch. Be sure not to overcrowd the pan.

            Drain and Cool: Use a slotted spoon to remove the fried arancini and transfer them to a paper towel-lined plate to drain excess oil.

              Serve: Garnish with fresh parsley if desired and serve hot with marinara sauce or a tangy dipping sauce of your choice.
