1 cup cooked shrimp, peeled and deveined

1 cup cooked crab meat, shredded

1 cup scallops, cooked and roughly chopped

1 cup mixed greens (arugula and spinach)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup bell pepper, diced (any color)

1 avocado, diced

1/4 cup olive oil

2 tablespoons lemon juice

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh herbs (cilantro or parsley) for garnish

Instructions
 

In a large bowl, combine the cooked shrimp, crab meat, and chopped scallops. Gently toss to mix the seafood together.

    In a separate bowl, prepare the vinaigrette by mixing the olive oil, lemon juice, Dijon mustard, salt, and pepper until well emulsified. Adjust seasoning to taste.
