Ingredients
  

2 cups fresh or frozen corn (thawed, if frozen)

1 package (8 oz) cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

4 slices bacon, cooked and crumbled

1/2 cup diced red bell pepper

1/4 cup green onions, finely chopped

1 tablespoon mayonnaise (optional for extra creaminess)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

Preheat your oven to 350°F (175°C).

    Cook the bacon in a skillet over medium heat until crispy. Remove from skillet, drain on paper towels, and crumble once cool. Set aside.

      In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise (if using). Mix until smooth and creamy using a hand mixer or a spatula.

        Fold in the corn, crumbled bacon, shredded cheddar cheese, diced red bell pepper, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are evenly distributed.

          Transfer the mixture into an oven-safe baking dish and spread it out evenly.

            Bake in the preheated oven for 25-30 minutes, or until the dip is bubbly and the top is lightly golden.

              Remove from oven and let it cool slightly before serving. Garnish with additional green onions if desired.

                Serve warm with tortilla chips for dipping.
