Ingredients
  

1 cup long-grain white rice

4 cups water (divided)

1 cup milk (dairy or plant-based)

1/2 cup brewed coffee (cooled)

1/2 cup sugar (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Ice cubes

Ground cinnamon and/or whipped cream for garnish

Instructions
 

Rinse the rice under cold water until the water runs clear, then drain it well.

    In a blender, combine the rinsed rice with 2 cups of water. Blend on high speed until the rice is broken down but not fully pulverized, about 20-30 seconds.

      Pour the rice mixture into a large bowl and add the remaining 2 cups of water. Allow it to soak for at least 4 hours or overnight in the refrigerator for best results.

        After soaking, strain the rice mixture through a fine mesh sieve or cheesecloth into another bowl, pressing down to extract all the liquid. Discard the leftover rice solids.

          In the bowl with the rice milk, add the brewed coffee, milk, sugar, vanilla extract, and ground cinnamon. Whisk together until the sugar is fully dissolved and all ingredients are combined well.

            Taste the horchata and adjust sweetness if necessary. For a chill drink, you can either serve it immediately over ice or refrigerate for another hour.

              Serve the horchata de café in glasses over ice, and garnish with a sprinkle of ground cinnamon or a dollop of whipped cream on top if desired.
