1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup honey

1/2 cup mayonnaise

1 tablespoon sweetened condensed milk

2 tablespoons lemon juice

1 egg, beaten

1 cup cornstarch

1 cup vegetable oil (for frying)

1/4 teaspoon salt

Fresh scallions, for garnish

Sesame seeds, for garnish

Prepare the Walnuts: In a small pan, bring one cup of water to a boil. Add the walnuts and boil for 2 minutes. Drain and return them to the pan; add 1/4 cup of sugar and stir over medium heat until caramelized. Once golden brown, remove from heat and set aside.

    Prepare the Shrimp: In a mixing bowl, toss the shrimp with salt and set aside. Dip each shrimp into the beaten egg, then dredge them in cornstarch until well coated.

      Fry the Shrimp: Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Once hot, add the shrimp in batches, cooking until golden and crispy (about 2-3 minutes per side). Remove and drain on paper towels.

        Make the Sauce: In another bowl, mix together honey, mayonnaise, sweetened condensed milk, and lemon juice until smooth and creamy.

          Combine: In a large mixing bowl, add the crispy shrimp and pour the honey sauce over them. Toss gently to coat each shrimp evenly.

            Serve: Transfer the shrimp to a serving platter, top with caramelized walnuts, and garnish with sliced scallions and sesame seeds.
