For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

½ cup heavy cream

1 teaspoon ground cinnamon

For the Baklava Topping:

1 cup unsalted pistachios, chopped

1 cup phyllo dough sheets, thawed

½ cup unsalted butter, melted

¾ cup honey

1 tablespoon water

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract, sour cream, heavy cream, and cinnamon until combined. Pour the mixture over the cooled crust.

      Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the edges are set, and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about 1 hour. Then, refrigerate for at least 4 hours or overnight for best results.

        Prepare the Baklava Topping: In a saucepan over medium heat, combine honey, water, and vanilla extract. Stir until honey is melted and mixed well. In a large bowl, mix chopped pistachios with ground cinnamon.

          Layer the Phyllo Dough: Preheat the oven to 350°F (175°C) again. Lay one sheet of phyllo dough on a parchment-lined baking sheet, brushing it with melted butter. Sprinkle a tablespoon of the pistachio mixture on top. Repeat this process for about 5 layers, brushing each layer with butter and adding pistachios in between, finishing with another sheet of phyllo.

            Bake the Baklava Layers: Bake for 15-20 minutes or until golden brown. Remove from the oven and immediately drizzle the honey mixture over the top. Allow to cool completely.

              Assemble the Cheesecake: Once the cheesecake has set, carefully remove it from the springform pan. Cut the baklava into small squares and place them decoratively on top of the cheesecake. Drizzle any remaining honey mixture over the cheesecake.
