1.5 pounds baby potatoes (halved)

3 tablespoons olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, honey, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper. Whisk until smooth.

      Add the halved baby potatoes to the bowl and toss them gently to coat with the honey mustard mixture.

        Spread the coated potatoes evenly onto a baking sheet lined with parchment paper, ensuring they are in a single layer.

          Roast in the preheated oven for 25-30 minutes or until the potatoes are tender and golden brown, tossing them halfway through the cooking time for even roasting.
