1.5 lb pork tenderloin

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper to taste

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for thickening)

Fresh parsley or green onions for garnish, chopped

Prep the Marinade: In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper until well combined. Reserve about 1/4 cup of the marinade for later use.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for the best flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Cook the Pork: Remove the pork from the marinade and place it in a baking dish. Discard the used marinade. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

          Make the Sauce: While the pork is baking, pour the reserved marinade into a saucepan. Bring to a simmer over medium heat. If you prefer a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry, then add it to the simmering sauce. Stir until the sauce thickens, about 2-3 minutes.

            Rest the Pork: Once cooked, remove the pork from the oven and let it rest for 10 minutes to allow the juices to redistribute.

              Slice and Serve: Slice the pork tenderloin into medallions and drizzle with the thickened honey garlic sauce. Garnish with chopped parsley or green onions for a burst of color.
