4 bone-in pork chops (about 1 inch thick)

1/3 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon ground black pepper

1/2 teaspoon salt

1 tablespoon olive oil

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and quartered

1/2 cup milk (or heavy cream for richer taste)

4 tablespoons unsalted butter

Salt and pepper to taste

Chives or parsley for garnish (optional)

Prepare the Marinade: In a bowl, whisk together honey, soy sauce, minced garlic, Dijon mustard, black pepper, salt, and thyme. Reserve half of the marinade for serving.

    Marinate the Pork: Place the pork chops in a large resealable plastic bag or a glass dish. Pour the marinade over the pork chops, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours for more flavor.

      Cook the Mashed Potatoes: While the pork chops are marinating, place the quartered potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

        Mash the Potatoes: Add butter and milk to the drained potatoes. Mash until smooth and creamy, adding more milk as needed for your desired consistency. Season with salt and pepper to taste. Keep warm.

          Cook the Pork Chops: Heat olive oil in a large skillet over medium-high heat. Remove the pork chops from the marinade (discard the used marinade) and sear the chops for about 5-6 minutes on each side, or until they are cooked through and reach an internal temperature of 145°F (63°C). Brush the reserved marinade over the chops in the last minute of cooking for extra flavor.

            Serve: Plate the pork chops alongside a generous scoop of mashed potatoes. Drizzle any remaining reserved marinade over the dish and garnish mashed potatoes with chopped chives or parsley if desired.
