Ingredients

1 lb (450g) chicken breast, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce (low sodium)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

Salt and pepper to taste

1 red bell pepper, cut into chunks

1 zucchini, sliced into rounds

1 cup cherry tomatoes

Skewers (wooden or metal)

Instructions

In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, sesame oil, salt, and pepper to create the marinade.

Add the chicken cubes to the bowl, ensuring they are well-coated with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

If using wooden skewers, soak them in water for about 30 minutes to prevent burning while cooking.

Preheat the grill or grill pan to medium-high heat.

Thread the marinated chicken onto the skewers, alternating with pieces of red bell pepper, zucchini slices, and cherry tomatoes for a colorful presentation.

Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.

Remove from the grill and let rest for a few minutes before serving.

Optional: Drizzle any leftover marinade over the skewers for added flavor before serving.

                  Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

                    - Presentation Tips: Serve the skewers on a platter garnished with fresh cilantro or green onions. Accompany with a side of steamed rice or a fresh salad for a complete meal!
