1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 tablespoon sesame oil

2 tablespoons cornstarch

2 tablespoons water

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Prepare the Marinade: In a bowl, whisk together honey, soy sauce, minced garlic, ginger, apple cider vinegar, and sesame oil until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

      Cook the Chicken: Heat a large skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off, and add to the skillet. Reserve the marinade for later. Sauté the chicken pieces for about 6-8 minutes, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

        Thicken the Sauce: In the same skillet, add the reserved marinade and bring to a simmer. In a small bowl, mix cornstarch with water until smooth; then add to the simmering marinade. Stir continuously until the sauce thickens (about 2-3 minutes).

          Combine: Add the chicken back to the skillet, tossing to coat all the pieces in the thickened honey garlic sauce. Cook for an additional 2-3 minutes, ensuring everything is heated through.
