Ingredients

1 lb boneless, skinless chicken thighs

1/4 cup honey

2 tablespoons chipotle peppers in adobo sauce (finely chopped)

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups cooked jasmine rice

1 cup black beans (drained and rinsed)

1 cup corn (canned or frozen)

1 avocado (sliced)

1 cup cherry tomatoes (halved)

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Chicken: In a mixing bowl, combine honey, chipotle peppers, soy sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs to the bowl and coat them well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Cook the Chicken: Preheat your grill or a large skillet over medium heat. Remove the chicken from the marinade, shaking off any excess. Grill or sauté the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Once cooked, let it rest for a few minutes before slicing.

Prepare the Rice Bowl: In a large bowl, layer the cooked jasmine rice as the base. Top the rice with black beans, corn, sliced avocado, cherry tomatoes, and the sliced honey chipotle chicken.

Garnish and Serve: Sprinkle fresh cilantro over the top and serve with lime wedges on the side to squeeze over the bowls for added zest.

Enjoy: Mix everything together to combine the flavors, and enjoy your Honey Chipotle Chicken Rice Bowls!
