2 pounds baby potatoes

1/4 cup unsalted butter, softened

2 tablespoons honey

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons fresh chives, chopped (or green onions for garnish)

Boil the Potatoes: Begin by washing the baby potatoes thoroughly. Place them in a large pot and cover with water, adding a generous pinch of salt. Bring to a boil and cook for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Prepare Honey Butter: While the potatoes are boiling, mix the softened butter and honey in a small bowl. Whisk until smooth and combined, then set aside.

      Drain and Smash: Once the potatoes are cooked, drain them and let them cool for a few minutes. Preheat your oven to 400°F (200°C). Place the potatoes on a lined baking sheet. Using a potato masher or a fork, gently smash each potato until they are flattened but still hold their shape, approximately 1/2 an inch thick.

        Season: Drizzle the smashed potatoes with the honey butter mixture, ensuring each potato is covered. Sprinkle with sea salt, black pepper, and garlic powder.
