Ingredients

2 boneless, skinless chicken breasts

1 cup BBQ sauce

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

4 large lettuce leaves (romaine or iceberg)

1 cup shredded carrots

1/2 cup diced cucumbers

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheddar cheese

4 large whole wheat wraps or tortillas

Optional: Fresh cilantro for garnish

Instructions

Marinate the Chicken: In a small bowl, mix together the BBQ sauce and honey. Place the chicken breasts in a zip-lock bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.

Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and rub with olive oil, garlic powder, paprika, salt, and pepper. Grill the chicken for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F). Brush with reserved marinade during the last few minutes of cooking for extra flavor.

Shred the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then, using two forks, shred the chicken into bite-sized pieces.

Prepare the Wraps: Lay out each whole wheat wrap or tortilla on a flat surface. On each wrap, create a layer starting with the lettuce leaves, followed by shredded carrots, cucumbers, cherry tomatoes, shredded cheese, and finally the shredded chicken.

Wrap It Up: Carefully fold the sides of the wrap inward and then roll from the bottom up, ensuring all the ingredients are enclosed.

Slice and Serve: Cut each wrap in half diagonally and serve with any remaining BBQ sauce on the side for dipping. Garnish with fresh cilantro if desired.
