1 pound baby carrots (or large carrots, peeled and cut into sticks)

3 tablespoons olive oil

2 tablespoons honey

3 tablespoons balsamic vinegar

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

¼ cup crumbled feta cheese (optional)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, whisk together the olive oil, honey, balsamic vinegar, garlic powder, salt, black pepper, and thyme until well combined.

      Add the baby carrots to the bowl and toss them in the dressing until they are evenly coated.

        Line a baking sheet with parchment paper for easy cleanup, then spread the coated carrots in a single layer on the sheet.

          Roast the carrots in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through cooking.
