1.5 lbs pork tenderloin

1/4 cup honey

1/4 cup balsamic vinegar

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh rosemary for garnish (optional)

Instructions
 

Marinate the Pork: In a medium bowl, whisk together honey, balsamic vinegar, minced garlic, Dijon mustard, olive oil, dried thyme, salt, and pepper. Place the pork tenderloin in a resealable plastic bag or shallow dish, and pour marinade over the meat. Seal the bag or cover the dish, refrigerate for at least 1 hour (or overnight for maximum flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear the tenderloin on all sides in the hot skillet for about 3-4 minutes per side until golden brown.

        Add Marinade: Pour the reserved marinade over the pork in the skillet.

          Bake: Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Rest: Once cooked, remove the skillet from the oven, cover the pork with aluminum foil, and let it rest for 5-10 minutes.

              Slice and Serve: Slice the tenderloin into medallions and drizzle with the pan juices. Garnish with fresh rosemary if desired. Serve it alongside roasted vegetables or a mixed salad for a complete meal.
