6 bone-in, skin-on chicken thighs

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped, for garnish

Marinade Preparation: In a medium bowl, whisk together the balsamic vinegar, honey, olive oil, minced garlic, rosemary, thyme, salt, pepper, and red pepper flakes until well combined.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for enhanced flavor).

      Preheat Cooking Surface: Preheat your oven to 400°F (200°C) if you plan to finish the chicken in the oven; alternatively, you can use a heavy skillet.

        Sear the Chicken: In a large oven-proof skillet over medium-high heat, add a bit of olive oil. Remove the chicken from the marinade (reserve the marinade) and place the chicken thighs skin-side down in the skillet. Sear for about 4-5 minutes until the skin is crispy and golden brown.

          Glaze Application: Turn the chicken thighs over and pour the reserved marinade over them. If using an oven, transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

            Reduce the Sauce: If cooking completely on the stovetop, reduce the heat to medium-low, cover the skillet, and cook for about 20 minutes, occasionally spooning the glaze over the chicken. Remove the lid for the last 5 minutes to allow it to thicken.

              Garnish and Serve: Once cooked, take the chicken out, let it rest for a few minutes, and garnish with chopped fresh parsley before serving. Drizzle any remaining glaze from the pan over the chicken for extra flavor.
