When it comes to choosing the right pork chops for this recipe, bone-in chops are the way to go. The bone not only adds flavor but also helps the meat retain moisture during cooking, resulting in a juicier final product. Bone-in pork chops often have a richer taste compared to their boneless counterparts, making them an ideal choice for this garlic butter preparation.

Ingredients

4 bone-in pork chops (about 1-inch thick)

4 tablespoons unsalted butter

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving (optional)

Fresh parsley, for garnish

Instructions

Preparation: Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, and smoked paprika. Let them sit at room temperature for about 20-30 minutes while you prepare the other ingredients.

Heat the Pan: In a large skillet, heat olive oil over medium-high heat until shimmering.

Sear the Pork Chops: Carefully add the pork chops to the skillet. Sear them for about 4-5 minutes on each side until they develop a golden-brown crust and an internal temperature of 145°F (63°C). Remove the chops from the skillet and set aside on a warm plate.

Make the Garlic Butter: In the same skillet, reduce the heat to medium, and add the butter. Once melted, add the minced garlic, fresh rosemary, and thyme. Cook for about 1-2 minutes, stirring constantly, until the garlic is fragrant and lightly golden but not burnt.

Baste the Chops: Return the pork chops to the skillet, spooning the garlic butter over them to coat. Cook for an additional 2-3 minutes, allowing the flavors to meld and ensuring the chops are heated through.

Serve: Transfer the pork chops to a serving platter. Drizzle with the garlic butter sauce from the skillet, garnish with fresh parsley, and serve with lemon wedges on the side for an extra zesty kick.
