4 pieces of bone-in, skin-on chicken thighs

1 cup orange juice

1/4 cup lime juice (freshly squeezed)

4 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon chili powder

Salt and black pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a large bowl, combine orange juice, lime juice, minced garlic, olive oil, soy sauce, honey, smoked paprika, cumin, oregano, chili powder, salt, and black pepper. Whisk until well blended. Add the chicken thighs and ensure they are well-coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Grill: Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). If using a charcoal grill, ensure the coals are well-lit and ashed over.

      Grill the Chicken: Remove the chicken from the marinade (reserve the marinade for basting) and place it skin-side down on the grill. Cook for 7-8 minutes, then flip and baste with the reserved marinade. Grill for another 7-8 minutes until the chicken is cooked through and has nice grill marks, reaching an internal temperature of 165°F (75°C).

        Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. This helps retain the juices.

          Serve: Serve your Pollo Loco garnished with fresh cilantro and lime wedges on the side.
