Ingredients
  

1 lb ground turkey or chicken

1 cup chopped onions

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups low-sodium chicken broth

2 cups water

1 cup uncooked whole wheat lasagna noodles, broken into pieces

2 cups fresh spinach, roughly chopped

1 teaspoon dried Italian seasoning

1 teaspoon paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Meat: In a large pot or Dutch oven, over medium heat, add the ground turkey or chicken. Cook until browned, breaking it up with a spatula. Drain any excess fat.

    Sauté Vegetables: Add the chopped onions and minced garlic to the pot. Sauté for about 5 minutes until the onions are translucent.

      Add Tomatoes and Broth: Pour in the crushed tomatoes, chicken broth, and water. Stir to combine.

        Add Pasta and Seasoning: Add the broken lasagna noodles, Italian seasoning, paprika, red pepper flakes (if using), salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes until the noodles are tender.

          Stir in Greens and Cheeses: Once the noodles are cooked, stir in the chopped spinach, ricotta cheese, and half of the mozzarella. Continue to simmer for another 2-3 minutes until the spinach is wilted and the cheese is melted.

            Serve: Ladle the soup into bowls and top each with the remaining mozzarella, grated Parmesan, and fresh basil leaves.
