4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon dried oregano

Salt and black pepper, to taste

4 cloves garlic, minced

4 tablespoons unsalted butter

Zest of 1 lemon

Juice of half a lemon

Fresh parsley, chopped (for garnish)

Preparation of Pork Chops: Remove pork chops from the refrigerator and allow them to sit at room temperature for about 30 minutes. This helps them cook evenly.

    Seasoning: In a small bowl, mix together the olive oil, chopped rosemary, thyme, oregano, salt, and black pepper. Rub this herb mixture all over both sides of the pork chops.

      Searing the Chops: Heat a large skillet over medium-high heat. Once hot, add the pork chops to the skillet and sear for about 4-5 minutes on each side until a golden crust forms and the internal temperature reaches 145°F (63°C). Remove the chops from the skillet and let them rest on a plate.

        Making Garlic Butter: In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

          Butter and Seasoning Mixture: Add butter to the skillet and let it melt. Once melted, stir in the lemon zest and lemon juice, mixing well. Simmer for about 2 minutes to meld the flavors.

            Combining: Return the pork chops to the skillet, spooning the garlic butter over them to coat well. Cook for an additional 1-2 minutes to reheat the chops gently.

              Serving: Remove from heat, garnish with fresh chopped parsley, and drizzle any remaining garlic butter over the top before serving.
