For the Dumplings:

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon dried parsley

1/2 teaspoon garlic powder

1 cup milk

1/4 cup unsalted butter, melted

Fresh herbs (like dill or chives) for garnish (optional)

Instructions
 

Prepare the Chicken Stew:

    - In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

      - Add minced garlic, sliced carrots, and chopped celery and cook for another 5 minutes until the vegetables are softened.

        - Stir in chicken pieces and cook until lightly browned on all sides.

          - Add the chicken broth, thyme, rosemary, bay leaf, salt, and pepper. Bring to a gentle simmer.

            - Cover the pot and let it cook for about 30 minutes, or until the chicken is cooked through and tender.

              - Once done, remove the chicken pieces, shred the meat, and discard the bones. If you prefer a thicker broth, mix the flour with a little water to create a slurry, then stir it into the pot and let it thicken for 5 minutes.

                Make the Dumplings:

                  - In a medium bowl, whisk together flour, baking powder, salt, dried parsley, and garlic powder.

                    - In another bowl, combine milk and melted butter. Pour the wet mixture into the dry ingredients and mix until just combined; do not overmix.

                      Combine and Cook:

                        - Add the shredded chicken back into the pot with the broth and bring to a gentle simmer.

                          - Drop spoonfuls of the dumpling batter over the simmering stew, covering the surface. Do not overcrowd them.

                            - Cover the pot tightly and let dumplings steam for about 15 minutes without lifting the lid. They should be fluffy and cooked through.

                              Garnish and Serve:
