Ingredients

1 box (14.4 oz) graham crackers

2 (3.4 oz) boxes instant vanilla pudding mix

4 cups whole milk

1 (8 oz) container whipped topping, thawed

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons butter

2 tablespoons milk

1 teaspoon vanilla extract (for chocolate glaze)

Instructions

Prepare Pudding Mixture: In a large mixing bowl, whisk together the instant vanilla pudding mixes and whole milk until smooth. Allow it to sit for about 5 minutes until it thickens.

Fold in Whipped Topping: Gently fold the thawed whipped topping into the pudding mixture until combined. Be careful not to deflate the whipped topping.

Layer the Cake: In a 9x13-inch baking dish, arrange a layer of graham crackers at the bottom. Spread half of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and the remaining pudding mixture. Top with a final layer of graham crackers.

Prepare Chocolate Glaze: In a small saucepan over low heat, combine chocolate chips, butter, and milk. Stir continuously until melted and smooth. Remove from heat and stir in the vanilla extract.

Top the Cake: Pour the chocolate glaze over the top layer of graham crackers, spreading it evenly to cover completely.

Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results. This allows the graham crackers to soften and give the cake its éclair-like texture.

Serve: Once chilled, slice into squares and serve. Enjoy your delightful No-Bake Chocolate Éclair Cake!
