For the crust:

200g (about 7 oz) digestive biscuits or graham crackers

100g (about 3.5 oz) unsalted butter, melted

2 tablespoons sugar

For the filling:

500g (about 18 oz) quark cheese (or substitute with cream cheese)

200g (about 7 oz) sour cream

150g (about 5.5 oz) sugar

3 eggs

1 tablespoon vanilla extract

Zest of 1 lemon

2 tablespoons all-purpose flour

1 teaspoon baking powder

Instructions
 

Prepare the crust: Preheat your oven to 180°C (350°F). Crush the digestive biscuits into fine crumbs and mix them with the melted butter and sugar in a bowl until combined. Press this mixture firmly into the bottom of a 9-inch springform pan to create a smooth, even layer. Bake for 10 minutes, then remove and let cool.

    Make the filling: In a large mixing bowl, combine the quark cheese and sour cream, and mix until smooth. Gradually add in the sugar, mixing well to incorporate. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, lemon zest, flour, and baking powder until just mixed.

      Combine: Pour the cheese mixture over the cooled crust in the springform pan, smoothing the top with a spatula.

        Bake: Place the springform pan in the preheated oven and bake for 50-60 minutes, or until the filling is set and the top is slightly golden. A toothpick inserted into the center should come out clean.

          Cool and chill: Once baked, turn off the oven and crack the door open, allowing the cake to cool gradually for about an hour. This helps prevent cracking. After cooling, refrigerate the Käsekuchen for at least 4 hours, preferably overnight.

            Serve: Carefully remove the Käsekuchen from the springform pan. Slice into wedges and serve chilled. Optional: garnish with fresh berries or a dusting of powdered sugar for added flair.
