1 lb (450g) diced ham

2 cups dried white beans (great northern or navy), rinsed and soaked overnight

1 large onion, chopped

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 bay leaf

1 tsp thyme (dried or fresh)

1 tsp smoked paprika

6 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, undrained

Salt and black pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beans: If you haven't done so already, rinse and soak the beans overnight in water. Drain and set aside.

    Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.

      Add Garlic & Spices: Stir in the minced garlic, thyme, and smoked paprika. Cook for an additional 1-2 minutes until fragrant.

        Combine Ingredients: Add the diced ham, soaked beans, chicken broth, diced tomatoes (with their juice), and the bay leaf to the pot. Stir everything together and bring to a boil.

          Simmer: Once boiling, reduce the heat to low. Cover the pot and let the soup simmer for about 1.5 to 2 hours, stirring occasionally, until the beans are tender.

            Season the Soup: After the beans are tender, taste the soup and season with salt and black pepper as needed. Remove the bay leaf before serving.

              Serve: Ladle the soup into bowls and garnish with chopped parsley.
