Ingredients
  

2 cups diced cooked ham

1 can (15 oz) white beans (cannellini or great northern), rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups low-sodium chicken broth

1 cup diced tomatoes (canned or fresh)

2 tsp dried thyme

1 tsp smoked paprika

2 bay leaves

Salt and pepper, to taste

2 cups fresh kale or spinach, chopped

2 tbsp olive oil

1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until the vegetables are softened, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced ham to the pot, stirring to combine, and cook for another 2-3 minutes.

        Pour in the chicken broth, then add the white beans, diced tomatoes, thyme, smoked paprika, and bay leaves. Season with salt and pepper to taste.

          Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20 minutes, allowing the flavors to meld.

            Remove the bay leaves and stir in the chopped kale or spinach. Cook for an additional 5 minutes or until the greens are wilted.

              Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
