1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

4 cups chicken broth (homemade or low-sodium)

2 medium onions, diced

3 cloves garlic, minced

3 large carrots, sliced

2 stalks celery, diced

2 medium potatoes, cubed

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn (fresh or frozen)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: Heat olive oil in a large, heavy-bottomed pot over medium heat. Add the diced onions, and garlic, and sauté for about 3-4 minutes until the onions are translucent and fragrant.

    Brown the Chicken: Add the chicken pieces to the pot, seasoning them with salt and pepper. Cook for about 5-7 minutes until the chicken is browned on all sides.

      Add the Vegetables: Stir in the carrots, celery, potatoes, green beans, and corn. Mix everything well to combine.

        Pour in the Broth: Add the chicken broth, Worcestershire sauce, dried thyme, dried oregano, and bay leaf to the pot. Bring the mixture to a boil.

          Simmer: Reduce the heat to low, cover the pot, and let the stew simmer for about 30-35 minutes, or until the vegetables are tender and the chicken is cooked through.

            Final Seasoning: Check for seasoning and adjust with additional salt and pepper, if necessary. Remove the bay leaf before serving.
