Hearty Chicken and Vegetable Stew

Ingredients
  

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 medium potatoes, diced

1 cup green beans, trimmed and cut into 2-inch pieces

1 cup celery, chopped

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

      Add Vegetables: Stir in the carrots, potatoes, celery, and green beans. Cook for an additional 5 minutes, stirring occasionally.

        Combine Ingredients: Return the browned chicken to the pot. Add in the diced tomatoes (with juices), chicken broth, thyme, oregano, and bay leaf. Stir everything together to combine.

          Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 30-35 minutes, or until the vegetables are tender and the chicken is cooked through.

            Final Seasoning: Taste the stew and adjust seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.

              Serve: Ladle the hearty stew into bowls, garnish with freshly chopped parsley, and enjoy!
