Ingredients

1 pound ground beef

1 cup uncooked long-grain rice

2 cups beef broth

1 can (10.5 oz) cream of mushroom soup

1 cup chopped onions

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Drain excess fat if needed.

Add the chopped onions to the skillet and sauté until they are translucent, about 3-4 minutes.

Stir in the garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.

In a large mixing bowl, combine the uncooked rice, beef broth, cream of mushroom soup, and mixed vegetables. Stir until everything is well blended.

Add the cooked beef and onion mixture to the rice mixture. Fold in 1 cup of shredded cheddar cheese.

Transfer the entire mixture into a greased 9x13 inch casserole dish. Spread it evenly.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

After 30 minutes, remove the foil, sprinkle the remaining 1 cup of shredded cheddar cheese on top, and return to the oven.

Bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Once done, let it cool for a few minutes before garnishing with fresh parsley. Serve hot and enjoy!
