1 loaf (1 pound) of rustic bread, cubed and dried

1/2 cup unsalted butter

1 cup onion, finely chopped

1 cup celery, finely chopped

2 cloves garlic, minced

1/2 teaspoon dried thyme

1/2 teaspoon dried sage

1/2 teaspoon dried rosemary

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

1/4 cup fresh parsley, chopped

2 cups chicken or vegetable broth

2 large eggs, beaten

Optional: 1 cup cooked sausage or diced apples for added flavor

Instructions
 

Prepare Bread: Preheat your oven to 350°F (175°C). Spread the cubed bread on a large baking sheet and bake for 10-15 minutes, or until lightly toasted. Allow to cool and then transfer to a large mixing bowl.

    Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the chopped onion and celery, and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

      Seasoning: Add the dried thyme, sage, rosemary, salt, and black pepper to the vegetable mixture, and stir well. Cook for one more minute to allow the flavors to meld.

        Combine Ingredients: Pour the sautéed vegetables and spices over the toasted bread cubes. Add the chopped parsley and any optional ingredients (such as sausage or diced apples). Toss gently to combine until the bread is evenly coated.

          Moisten the Stuffing: In a separate bowl, whisk the chicken or vegetable broth and beaten eggs together. Gradually drizzle this mixture over the bread mixture, stirring gently until the bread is moistened but not soggy.

            Bake: Transfer the stuffing mixture into a greased baking dish. Cover with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
