4 bone-in, skin-on chicken thighs

1 cup barbecue sauce (preferably a sweet and tangy variety)

1/4 cup pineapple juice

2 tablespoons soy sauce

2 tablespoons brown sugar

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon crushed red pepper flakes (optional)

1/4 teaspoon black pepper

Fresh cilantro or green onions, for garnish

Lime wedges, for serving

Instructions
 

Marinade Preparation: In a large mixing bowl, combine barbecue sauce, pineapple juice, soy sauce, brown sugar, grated ginger, minced garlic, crushed red pepper flakes, and black pepper. Mix well until the sugar dissolves.

    Marinate the Chicken: Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavors.

      Preheat the Grill: When ready to cook, preheat your grill to medium-high heat (about 400°F/200°C).

        Grilling the Chicken: Remove the chicken thighs from the marinade, letting excess sauce drip off. Place the chicken skin-side down on the grill. Cover the grill and cook for about 6-7 minutes.

          Baste and Flip: After 7 minutes, flip the chicken thighs and brush with some of the reserved marinade. Grill for an additional 6-7 minutes, until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

            Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute for a tender bite.
