2 cups granulated sugar

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup vegetable oil

4 large eggs

2 cups grated carrots (about 4 medium carrots)

1 cup crushed pineapple, drained

1/2 cup shredded coconut

1/2 cup crushed walnuts or pecans (optional)

1 tsp vanilla extract

Cream cheese frosting (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.

      Combine Wet Ingredients: In another bowl, whisk together the vegetable oil and eggs until well blended. Stir in the grated carrots, crushed pineapple, shredded coconut, nuts (if using), and vanilla extract.

        Combine Wet and Dry Mix: Gradually incorporate the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to over-mix; a few lumps are okay.

          Bake the Cakes: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

            Cool the Cakes: Remove from the oven and allow the cakes to cool in the pans for about 10 minutes. Then, carefully transfer them to a wire rack to cool completely.
