Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

4 large eggs

1 cup vegetable oil

3 cups grated carrots (about 4-5 medium carrots)

1 (20 oz) can crushed pineapple, drained

1 cup chopped walnuts (optional)

1 cup shredded coconut (optional)

For the Cream Cheese Frosting:

1 (8 oz) package cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, and salt until well combined.

Combine Wet Ingredients: In another bowl, beat the eggs and mix in the vegetable oil.

Combine Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the grated carrots, crushed pineapple, walnuts, and shredded coconut until evenly distributed.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Prepare the Frosting: In a medium bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar, then mix in the vanilla extract. Add milk, one tablespoon at a time, until you reach your desired frosting consistency.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake.

Decorate: Optionally, sprinkle additional chopped walnuts or shredded coconut on top of the frosted cake for garnish.

Serve & Enjoy: Slice and serve your delicious Hawaiian Carrot Pineapple Cake, and enjoy the delightful tropical flavors!
